Did you know it is National Vinegar Month and National Salad Month? I love vinegar. Vinegar on my subs. Vinegar chips. And I always slurp up the last bit of vinegar in my salad bowl. Too much information? I think not!
I thought I’d share with you one of our favorite homemade salad dressings using Pompeian Balsamic Vinegar so we can start #DressingItUp for National Salad Month!
My favorite vinegar is balsamic vinegar. It brings me back to our Italian honeymoon and the yummy aceto balsamico we had in Cinque Terre and in Pompeii! If I have to make a salad dressing from scratch, I always choose balsamic vinegar.
Strawberry Walnut + Goat Cheese Balsamic Salad
- 3/4 cup Pompeian Balsamic Vinegar
- 5 or 6 fresh strawberries
- 1/4 cup red onion
- 1 tbsp honey
- 2 tsp sugar
- 1/2 tsp salt
- 1/2 lb fresh strawberries
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- fresh salad greens
Finely chop the red onion. Set aside in a mason jar or other salad dressing container.
Finely chop 5-6 strawberries, removing the leaves and stem. Add to the red onion.
Pour in the Pompeian Balsamic Vinegar. Add the honey, sugar, and salt and mix well. Marinate in the refrigerator for an hour, or until ready to serve.
Wash and chop salad greens. Place in mixing bowl.
Wash and slice the rest of the strawberries length-wise, removing leaves. Add to greens.
Pour the refrigerated salad dressing. Toss lightly and divide into four bowls.
Sprinkle the goat cheese and chopped walnuts.
Serve and enjoy!
