Strawberry Walnut + Goat Cheese Balsamic Salad

Ingredients

Dressing

  • 3/4 cup Pompeian Balsamic Vinegar
  • 5 or 6 fresh strawberries
  • 1/4 cup red onion
  • 1 tbsp honey
  • 2 tsp sugar
  • 1/2 tsp salt

Salad

  • 1/2 lb fresh strawberries
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • fresh salad greens

Instructions

Dressing

  1. Finely chop the red onion. Set aside in a mason jar or other salad dressing container.
  2. Finely chop 5-6 strawberries, removing the leaves and stem. Add to the red onion.
  3. Pour in the Pompeian Balsamic Vinegar. Add the honey, sugar, and salt and mix well. Marinate in the refrigerator for an hour, or until ready to serve.

Salad

  1. Wash and chop salad greens. Place in mixing bowl.
  2. Wash and slice the rest of the strawberries length-wise, removing leaves. Add to greens.
  3. Pour the refrigerated salad dressing. Toss lightly and divide into four bowls.
  4. Sprinkle the goat cheese and chopped walnuts.
  5. Serve and enjoy!
